This is the aim of our Restaurant and of our Chef Mimmo, the best Chef in town, with his thirty years’ experience managing the kitchens of all the best hotels. His experience and knowledge of gastronomy are encyclopaedic, and he has organised banquets, lunches and dinners for all the town’s VIP guests, including Lady Diana, Gorbachev, Bush, Fellini, and many others. Mimmo’s cuisine guarantees top quality ingredients and great attention to the composition of the dishes served. His specialities are works of art!

- "Country Fare", rustic-style pasta dishes such as maltagliati, hand-made tagliatelle, and the unrivalled cappelletti in capon consommé.
- "Flavours of Our Land", now-vanished dishes from our farming traditions, re-discovered and re-created by Mimmo’s clever hands.
- "Gifts from the Sea", fish dishes, including our local sailors’ favourite mixed fried fish, served with a delicate tartare sauce. A masterpiece.

Ennio Stocco, celebrity maître d’
Ennio Stocco is not simply our maître d’. We prefer to think of him as an extraordinary master of ceremonies, a person with unsurpassed competence and class, as well as someone who is naturally gifted with the ability to make every guest in the dining room feel totally at ease.
And things couldn’t possibly have turned out differently. His vocation has grown over more than thirty years. He worked initially as maître d’ at the legendary Grand Hotel in Rimini, where he developed the incomparable professionalism he now offers guests of the Clarion Hotel Admiral Palace.
During his career, our maître d’ has served practically all the celebrities and famous figures that have stayed in Rimini. A unique experience that has permitted him to write his book entitled “Ennio Stocco Maître al Grand Hotel” (Ennio Stocco, maître d’ at the Grand Hotel), a surprising anthology of his memoirs and curiosities linked to his long career.
